Shitake has a very long history of use throughout East Asia, and people collect it wild. People in China started growing mushrooms around 1,000 to 1,200 years ago.

They exhibit one of the highest amounts of natural copper, a mineral that supports healthy blood vessels, bones and immunity. Shiitake mushrooms contain natural vitamin D, which is one of the vitamins most needed to build strong and healthy bones. Shiitake mushrooms contain eritadenine, a compound known to lower blood cholesterol. They also contain beta-glucans, which reduce inflammation and prevent cholesterol from being absorbed by the gut. They are rich in polysaccharides such as lentinans and other beta-glucans.
